I have a grizzly 300 2012, recently I flipped it and just got done fixing everything. But just found a new problem. If I run it for long enough the grizzly will start to die down as if it ran out of gas mid ride. And gas is completely full. This only happenes after around 5 minutes of riding. Right now I don’t have any coolent in the quad so I don’t know if that’s the problem because it can’t use it to cool the engine or if it’s a gear or engine problem. Does anyone have suggestions?

You may cause that engine to cease to be an engine, if you are running it without coolant. You wouldn't think of running your car that way, would you? It has to have coolant to keep the moving parts from welding themselves together through heat and friction.
As the parts heat up, the friction increases, until things break, violently.

Your gas tank may not venting properly. To check, crack the cap when the problem occurs
